Breaking Fat: How Lipid Metabolism Works

Emulsification involves hydrolysis which turns dietary fats into simple acids. Digestive juices and bile salts perform detergent action that emulsifies the fat. The process yields mixed micelles which transport cholesterol, vitamins A, D, E, and K, and other insoluble lipids.

Fat Digestion

The pancreas secretes an enzyme called pancreatic lipase which further hydrolyzes the fats. This also converts triglycerides to 2-monoglycerides.

Fat Metabolism

After being broken down to simpler acids, the fats then enter the blood circulation. Some of the acids are re esterified with glycerol to form triglycerides which converts to chylomicrons as they enter the blood stream. When lipoprotein lipase act on the chylomicrons, they are stored as fat in adipose tissue for later use.


Through beta oxidation and citric acid cycle, cells with mitochondria can use the fatty acids as sources of energy.
